  • The usukuchi soy sauce is naturally brewed, making it a unique tradition that no other brewery follows.
  • The water used in the process is sourced from the Ibo river, known for its extreme purity and softness.
  • The soy sauce offers refreshing and full-bodied flavors with a high umami content.
  • Perfectly balanced sweetness and saltiness and distinct rose-coloured hue.
  • During the making process, Koji malt, known as Aspergillus oryzae, plays a crucial role.
  • The brewery is a proud member of the Tatsuno Chamber of Commerce and Industry and holds certification from the National Federation of Soy Sauce Manufacturers Association and the Japan Agricultural Standards (JAS).
