Rice Shiro Miso

Miso is another health-beneficial fermented product from Japan, and the market offers countless great miso varieties, but this one truly stands out.

  • This small-scale, family-run business decided to export their products just a little over a year ago. Their origins date back to the 1800s, and now they specialize in koji, miso, and other fermented products.
  • Their Kyoto-style miso is aged for 3-4 months and made in small batches only. Amongst other varieties, the Shiro miso is one of the mildest and smoothest.
  • They exclusively use 100% Japanese natural ingredients, resulting in a product with slightly sweet tones, a fragrance reminiscent of fresh crop rice, and a fresh, creamy texture.
  • This miso is perfect for creating desserts, dressings, miso mayo, miso butter, and delicate fish courses, all of which will be packed with umami, moderate saltiness, and sweet flavors.
  • With a salt content of 6%, it contains half the salt found in most common miso varieties.
  • We highly recommend using this product in recipes whenever you are inspired by Ottolenghi’s style of cooking.
  • It is also worth noting that this is a Kosher product, meeting specific dietary requirements.
